According to the USDA, we must cook pork until it is 145 degrees internally to ensure it is safe to eat. However, pork is safe to eat at 137 degrees. That’s not to say that you shouldn’t cook it until it reaches 145 degrees. But you don’t want to overcook the pork.
You can achieve this goal by letting the pork rest, covered after it reaches 137 degrees. The warmth inside the covered pork will continue to rise, but only slightly making it both safe to eat and juicy.
